This is a super simple vegan recipe. Just buy your favorite vegetables from the supermarket- I got broccoli, pok choy, red and yellow bell peppers, zucchini, mushrooms, tomatoes and onions. Throw some soy nuggets or tofu in for protein if you like. Heat a little sesame oil with whole garlic, throw in some chopped ginger, a few spoonfuls of dark soy sauce and whole dried red chillies. Add in the veggies and stir like mad till the veggies are cooked but still crunchy. Goes best with brown rice. I recommend the brown rice from Conscious Foods.
